I add roasted mixed mushrooms plus Italian sausage when I'm not serving vegetarians. it lacked flavor, but was easy to bake so perhaps I'll try it again with modifications. I give it 2 out of 4 because of my four guests, 2 thought it was OK and two didn't care for it. I wish so badly I would have liked this recipe. My guy was polite and ate half of it but was not overly excited about the dish. I had added garlic to add flavor but sadly, this dish was not a hit for us. With so many recipes out there, I am not sure I will make this again. With a couple of tweaks, this was super delicious and fairly healthy! I also went heavy on the dried herbs, like rosemary, thyme, and lots of sage. They both added a depth of flavor that I suspect wouldn't have been there without them. Like JMMEE, I also added mushrooms and sausage to the mix, and it was a great addition. I have never tried that and it was amazing! The Dijon is what brings this meal together. I also had some dandelion greens, so I mixed it with the baby kale. I used brown rice since I didn't have wild rice, toasted pine nuts instead of walnuts, added a little cayenne, and skipped the parmesean. Also, I added a sprig of rosemary, a bay leaf and 2 whole cloves to the rice water. Since some of the other reviews suggested there was not a lot of flavor here, I added thyme, marjoram, and sage to the oil as I sauteed the shallot. precooked and squeezed-dry spinach finely chopped.
